Dr. D's Barbeque Smash Burgers
Ingredients
- • 2-3 lbs 93-7 ground beef rolled into 16, 2 oz sized beef balls
- • Your favorite rub
- • 1 lb bacon
- • 1 large onion, thinly sliced and seasoned with salt and pepper
- • 8 slices white American cheese
- • 8 potato burger buns
- • Dr. D’s Original Barbeque Sauce, generous for finishing and bun dressing
- • 2 tablespoons olive oil
- • 2 tablespoons butter (for onions and buns)
Equipment
- Cast-iron griddle or heavy skillet
- Sturdy metal spatula
- Parchment squares

Sauté the onions
Set the griddle or skillet over medium. Add 1 tablespoon butter and olive oil. Cook the onions, stirring, until soft and caramelized. Keep warm on your skillet.

Cook the bacon
Cook the bacon on your cast iron skillet.

Season the beef
Coat the outside of each of the 16 beef balls generously with your favorite rub.

Preheat for the smash
Raise heat to medium-high. Add the remaining 1 tablespoon olive oil and melt the remaining 1 tablespoon butter on the surface. This extra fat helps keep 93–7 juicy and builds crust.

Smash and sear
Work in batches. Place four balls down, top with a parchment square, and press firmly to about ¼ inch. Remove parchment and let them sear for 1-2 minutes until the edges are deeply browned and lacy.

Flip, sauce, and cheese
Flip the patties. Place one slice of white American on one patty, cook to your doneness 1-2 minutes more, then stack the second patty on top so the cheese melts between them. Apply Dr. D’s Original Barbecue Sauce generously to each double-stacked burger. Keep warm and repeat to make 8 double patties.

Grill the buns
Split the buns. Wipe the surface if needed, then add a little butter and toast buns cut side down until golden, 30 to 60 seconds. Spread Dr. D’s Original Barbecue Sauce generously on the bottom buns.

Assemble
Bottom bun with Dr. D’s Original Barbeque Sauce, sautéed onions, double-patty stack, bacon, and extra Dr. D’s Original Barbecue Sauce, then add the top bun.
